We’ve made these bars with a buttery shortbread crust and a sugar free lemon curd. The shortbread’s buttery flavor cuts into the tartness of the lemon curd, balancing the flavor out for a delicious dessert bar. While most lemon bars are made with a ton of added sugar, we created a recipe that doesn’t have any! The lemon curd is sweetened with our sugar free vanilla syrup. Why? Vanilla brings a gentle sweetness to the silky lemon curd.
We bake the gluten free shortbread crust first, then pour the lemon curd on top. The lemon curd then bakes in the oven for another 20 minutes to create a golden brown crust and a perfectly set curd. While other recipes will have you working over a stove for this curd, we made it simple thanks to the oven! You’ll have a yummy spring dessert easily and in no time at all.

Can I make crustless lemon bars?
Our lemon bar recipe includes a buttery shortbread crust that’s gluten free and keto friendly. But, you can always skip that step and make the curd on its own! We recommend trying the crust version first because the buttery keto crust compliments the tart lemon curd.
What is lemon curd?
Lemon curd is a delicious dessert filling made with lemons, eggs, and sugar. Our keto friendly lemon curd does not have any added sugar. Instead we use our all natural monk fruit sweetened keto vanilla syrup. That means the taste of the curd will have the gentle sweetness of vanilla and no aftertaste. What does lemon curd taste like? Lemon curd tastes like a lemon custard, which is silky and sweet.
My lemon bars are too tart, what do I do?
Lemon bars are supposed to be a little tart and a little sweet, but if this recipe is too tart for your taste buds, hold back on the lemon juice. The lemon juice is the source of the tartness and reducing it will not take away too much of the flavor. This recipe also uses lemon zest, which adds citrus flavor without too much tart.
How do I zest a lemon?
Lemon zest is an important part of this recipe, so don’t skip the step! Zesting a lemon can be done with a microplane or zester, usually found on most cheese graters. Only zest the yellow and avoid getting down to the white pith, which is very bitter. We recommend rotating the lemon as you zest to avoid getting to the pith layer.
